This is a recipe I found on pinterest that immediately snagged my attention for it’s absurd simplicity:
1/2 cup gee/melted butter
3/4 cup coconut flour
2 tbsp honey
1/4 tsp salt
Mix it all together, bake in greased pan at 350 for 40 minutes.
Waahh!! I had to try this. No way was it that simple and easy and tasted good. This is also a very heartily nutritious recipe, high in protein and fiber and good fats (use grass-fed butter, Kerrigold is our butter brand of choice).
Oooh but it was that good. First time around I added a dash of baking powder out of doubt and it was a little too fluffy/spongy for my taste. But the flavor was delicious. And it was hearty. Second time I was out of butter so substituted coconut oil, left out the doubter’s baking powder, and added just a little vanilla. The texture and density came out perfectly, but the butter really carries a lot of the good flavor. The coconut oil version was still good, but just a little more bland.
While this is a relatively expensive loaf of bread to make (half a dozen eggs and a whole stick of butter!) it’s hearty, nutritious, and so so so good.
Now I’m dying to try it in the waffle iron or make pineapple muffins or find a way to make healthy(ish) cinnamon rolls!
